APPEARANCE
A beautiful pale gold appearance with golden highlights, enlivened by a fine, delicate effervescence.

PALATE
The attack unveils a rich generosity sustained by flavours of fresh, tart red fruits (redcurrant and wild strawberry). A texture both crisp and indulgent accompanies notes of white cherry, fresh pear and apricot. The persistent finish opens onto hints of candied lemon and smoky notes.

AROMA
A complex profile blending dark fruits and delicate spices (black cherry, Sichuan pepper and ginger). The aromatic profile then evolves to reveal nuances of blueberry and blackberry, highlighted by refined floral notes evoking old rose and peony.

TASTING
This fifth wine of the family rediscovers the natural expression of a pure Pinot Noir on exceptional terroirs. Served at cellar temperature (10/12° C), it can be paired with culinary dishes such as hay-cooked poultry or minced beef with fresh coriander and spring onions.

“ I have known Billecart-Salmon for many years; I must have been around 22 when I first tasted one of its champagnes. It is an iconic House, with the distinctive quality of standing at the crossroads between the spirit of a winemaker and that of a great Champagne House. I know the Blanc de Blancs very well, and particularly appreciate its precision and remarkable length on the palate, but I had never tasted the Rendez-Vous cuvées before. With this type of cuvée, I rediscover the grower spirit of Billecart-Salmon. On the nose, Rendez-Vous N°9 already reveals a subtle patina and the first signs of evolution, followed by beautiful Pinot Noir fruit, with spicy, peppery notes that remind me of wild blackberries and, above all, Sichuan pepper. I also particularly enjoy its pronounced chalky character. This is very much a champagne for the table, one that I naturally associate with autumn, figs or mushrooms. Its complexity also lends itself to something beautifully pure, such as a fine Loctudy langoustine roasted in its shell with ginger butter and hazelnut oil. I can perfectly imagine enjoying it in Brittany, at my country house, with my family, beside the fire. ”
