Generous and elegant

This seventh Rendez-Vous is all about the Meunier grape variety from the Venteuil terroir on the right bank of Vallée de la Marne. Its sunny exposure and its predominantly clay soil offer this wine a fine maturity. Made on the base of the 2018 vintage, it benefits from a long ageing on lees for 63 months. Meticulous selection, focusing on the purity of the fruit and the balance of flavours, always with a low dosage.

Billecart-Salmon takes you to the historic vineyards of Venteuil in the heart of Vallée de la Marne.
Here you will discover a new expression of Meunier, revealing a very special identity. The delicacy of its floral notes and the sweetness of its fruity aromas from this single varietal wine will brighten up your most beautiful shared moments.






APPEARANCE

A luminous straw yellow hue with soft glints of silver enlivened by a fine effervescence elegantly focused towards the centre of the glass.


PALATE

Generous, delicious flavours, borne upon infused fruits (cherries in syrup, fresh pear, pomegranate), developing towards a vibrant finish with tart saline inflexions.


AROMA

The champagne releases a refined floral bouquet (of linden and sweet vernal grass) in league with subtle scents of lemony citrus. It will awaken your senses, ranging from stone fruit (plum) to a suspicion of fruit cake. A very delicate ensemble in which the expression of the Meunier subtly unveils its charms.


TASTING

This seventh Rendez-Vous repeats the singular experience of a pure Meunier. Served at cellar temperature (10-12°C), you can set your culinary heart on a risotto with clams and green asparagus tips or chestnut puff pastry brioche.

 I’ve been familiar with Billecart-Salmon champagnes since I was a child, thanks to my father. Without being conscious of it, I took my first steps with this great champagne house. Then, in 2019, I tasted my first Elisabeth Salmon vintage, the 1998 at it happens, at Les Troisgros with Christian Vermorel — an unforgettable treat. A very collector’s item, Rendez-Vous No. 7 opens up in two stages: a wonderfully vivacious backbone and a pure brilliance, sustained on delicate, creamy bubbles, accompanied by sophisticated indulgence. Then come sharper zesty notes, yielding to the sweetness of nectarine and peach, which lingers delightfully on the palate, leading to an almost salty finish. As it benefits from decanting, this cuvée would meet its ideal match in a slow-roasted jammy oxheart tomato, accompanied by a sorbet of Black Krim, sour cream and wild strawberries, all enhanced by a cherry tomato liquor with aged wine vinegar and basil. The finesse of the flavour would resonate with the sorbet and the strawberries, while the generous texture would marry perfectly with the jammy tomato flesh and its effervescence would further enhance its aromatic freshness, adding a rare length to the dish. This cuvée brings summer cooking with a good friend to mind and a holiday rental in Provence.
