Tasting notes
This cuvée is a blend of two different years revealing the special quality of the Chardonnay. Its complexity, its great vinosity and the surprisingly fresh finish is particularly appreciated by the most informed wine lovers.
APPEARANCE
An ultra-delicate effervescence with a rich mousse and lively, fine bubbles. A stunning luminous gold hue with sparkling green reflections.
PALATE
A creamy sensation with a chalky and meringue texture, associated with nuances of fresh almonds, citrus zest, and lemony notes. An exquisitely refined and persistent smoothness, finishing with a delicate touch of salinity.
AROMA
A pure, mineral intensity with an uncommon typicity, releasing notes of brioche, fresh butter, and white flowers. A distinguished and subtle realm that delicately evolves with a remarkable finesse.
TASTING
An exceptional fermentation with a mineral, chalky style, perfectly complementing Osciètre caviar or select noble fish served as carpaccio or ceviche.

“ The first time I tasted a cuvée from Maison Billecart-Salmon, it was on my 20th birthday. A day that I will never forget! More often than not I taste Le Blanc de Blancs from magnum. The 100% Chardonnay fully reveals itself in this format. I like the mineral aspect which is taut, vivid and with a slight richness. A perfect balance between delicacy and elegance with a finish that is strengthened by the minerality. In Saint Placide, we propose a smoked salt turbot. The natural flavour of the turbot and the contrast with the smoked salt is revealed by the finesse and the persistence on the palate. The harmony is evident with this exceptional cuvée. For me, any place is perfect for tasting Le Blanc de Blancs. From the very first sip, you know that it’s going to be a great experience in an ideal location and especially if you’re in good company on an island off the coast of Saint-Malo, for a simple picnic away from it all except for the pleasures of that exact instant.
