N°8 MEUNIER

Sensual and elegant

This eighth Rendez-Vous reveals the Meunier grape variety and expresses the full mineral tension of the terroir of Leuvrigny with its predominantly chalky soil. Made on the base of the 2018 vintage, this single-cru champagne benefits from long ageing for 63 months. Meticulous selection, focusing on the purity of the fruit and the balance of flavours, always with a low dosage.

Les Rendez-vous de Billecart-Salmon

In its continuous quest for excellence, Billecart-Salmon is constantly experimenting with new methods to further improve the quality of its wines. A range has been born from the fruit of this work to offer you a unique tasting experience. Precise, New, Bold, each new release will epitomise an exceptional terroir and a champagne grape variety as well as the art of a meticulous winemaking.

A sublime grape variety and terroir

Billecart-Salmon takes you to the historic vineyards of Leuvrigny in the heart of Vallée de la Marne.
Here you will discover a new expression of Meunier, revealing a very special identity. The delicacy of its floral notes and the sweetness of its fruity aromas from this single varietal wine will brighten up your most beautiful shared moments.

In Perfect Harmony with Fréderic Lorimier

Chef at Virtus* restaurant,Paris

My first memory of Maison Billecart-Salmon was a team meal organised at the Ferme du Pré, the bistrot run by the Chef, Fréderic Anton. A wonderful moment of sharing with Le Blanc de Blancs, a blend of elegance and freshness. Rendez-Vous No. 8 is a wine of considerable finesse. The nose, which reveals notes of citrus fruits, very quickly yields to greater complexity on notes of toasted brioche. In the mouth, the bursting of its fine bubbles offers a delicate, chalky texture, a tension that adds notes of citron and fresh almonds, ending on a persistent salinity. A wine that brings to mind a dish from the menu of the restaurant Virtus: Les Belles de Bretagne. A briefly seared langoustine to be served on delicate flesh, slow-roasted potatoes in a consommé made from their half-shells with the silkiness of the Meunier and a herby velouté sauce with watercress, horseradish and smoked oil. A dish and a wine that spar with each other in terms of textures, achieving a balance between freshness and complexity and a flavoursome echo that adds a gourmet touch to its fullness of flavour. My ideal moment to enjoy it would be with my wife, as she too is in love with the craftsmanship of champagne, that we would savour simply with a good cheeseboard and a fine sourdough bread. Love and indulgence.
