In Perfect Harmony with Fréderic Lorimier
Chef at Virtus* restaurant,Paris

“ My first memory of Maison Billecart-Salmon was a team meal organised at the Ferme du Pré, the bistrot run by the Chef, Fréderic Anton. A wonderful moment of sharing with Le Blanc de Blancs, a blend of elegance and freshness. Rendez-Vous No. 8 is a wine of considerable finesse. The nose, which reveals notes of citrus fruits, very quickly yields to greater complexity on notes of toasted brioche. In the mouth, the bursting of its fine bubbles offers a delicate, chalky texture, a tension that adds notes of citron and fresh almonds, ending on a persistent salinity. A wine that brings to mind a dish from the menu of the restaurant Virtus: Les Belles de Bretagne. A briefly seared langoustine to be served on delicate flesh, slow-roasted potatoes in a consommé made from their half-shells with the silkiness of the Meunier and a herby velouté sauce with watercress, horseradish and smoked oil. A dish and a wine that spar with each other in terms of textures, achieving a balance between freshness and complexity and a flavoursome echo that adds a gourmet touch to its fullness of flavour. My ideal moment to enjoy it would be with my wife, as she too is in love with the craftsmanship of champagne, that we would savour simply with a good cheeseboard and a fine sourdough bread. Love and indulgence. ”
