In Perfect Harmony with Gilles Marchal

Pastry Chef, Pâtisserie Gilles Marchal

The Demi-Sec is profoundly associated with my childhood, a little guilty pleasure of my mother who particularly enjoyed the sweet and gourmand aspect. But for me, this cuvée is also like the history of the House: remarkable, familial and authentic. It’s a beautiful true story of champagne. This Demi-Sec is a beautiful gourmand champagne with a total finesse – likes its bubbles – which evolves towards aromas of butter and brioche. I often associate this cuvée with dessert, but not necessarily one which is too sweet. More so with a shortbread biscuit or with a strawberry tartelette, or even a toasted brioche with foie gras. All delicately created and beautiful combinations. Equally, I would propose pairing it with a lemon meringue tart with lime zest: the meringue aspect will bring a balance between the acidity and the sugar that it contains. In any case, this champagne will accompany a very special moment with people that you care about and that you love, because it’s not where you enjoy it but it’s the moment itself that is remembered and the memories that you create with your nearest and dearest.
