N°4 CHARDONNAY BRUT

Complexity and mineral purity

This fourth wine highlights Chardonnay from Mesnil-sur Oger, a historic terroir of the Côte des Blancs, classified as a Grand Cru. It comes exclusively from the 2015 vintage, and is slowly and meticulously aged on its lees. A selective approach is used, based on the purity of fruit and a balance of flavours, with low dosage.

A sublime grape variety and terroir

Billecart-Salmon takes you to the historic village of Mesnil-sur-Oger on the Côte des Blancs. Here you will discover a new expression of Chardonnay, revealing a very special identity. The delicacy of its floral notes and the sweetness of its fruity aromas from this single varietal wine will brighten up your most beautiful shared moments.






APPEARANCE

Its luminous golden yellow colour offers a radiant, sparkling finish that gives way to a fine, persistent bubble.


PALATE

A captivatingly tense tactile sensation is dominated by a gritty, seductive spirit (Menton lemon, blood orange and hazelnut powder). Radiant complexity pairs with a characteristic touch of salinity of the great terroirs of the Côte des Blancs. A delicate finish with hints of bergamot and almond milk.


AROMA

Its sensory development leans on distinguished aromatic floral notes, which speaks to its great minerality
of fruits (jasmine, fresh pineapple and buttery brioche). Its sensual, refined flavour is based on white pome fruit
(tart pear, medlar). It is the perfect expression of subtly disciplined Chardonnay, meticulously matured on the lees.


TASTING

This single-varietal & Grand Cru terroir offers an outstandingly delicious concentration of flavours. Served at
cellar temperature (10/12° C), culinary pairings can include sea bass cooked in a salt crust with thyme or scallop yakitori.

 Ever since I started working in restaurants, I've always had the greatest respect for the Billecart-Salmon champagne house, and I particularly appreciate their Brut Rosé and Brut Sous Bois.
This 100% Chardonnay Cuvée No. 4 is full-bodied with a creamy mouthfeel and remarkable aromatic persistence. To accompany this wine, I would recommend a tartare of langoustines blended with a few almonds, caramelised walnuts, and fine slices of Lardo di Colonnata – a play of textures and flavours that harmonises nicely with this bubbly's cheering profile. The ideal place to enjoy this wine would be at a table in my restaurant Fleur de Pavé, or by the fireside!
