This is the fifth edition of a wine sourced from 5 historic terroirs: Verzenay, Ambonnay, Aÿ, Mareuil-sur-Aÿ and Verzy, where the Pinot Noir grape gives the wine its distinctive character. Selective work is carried out based on the search for purity of the fruit and the balance of flavours, to define a precision-oriented style.

A sublime grape variety and terroir

Billecart-Salmon takes you to the historic vineyards of Verzenay, Ambonnay, Aÿ, Mareuil-sur-Aÿ and Verzy, on the Montagne de Reims.

Here, you will discover a new expression of Pinot Noir that instills in the wine a distinctive personality. A single-varietal wine, endowed with a delicate floral nose and great minerality, most likely to brighten up your greatest shared moments.






APPEARANCE

Shimmering, luminous visual delight, with a golden yellow hue and bright, sparkling reflections. An extremely fine, dynamic and streamlined bubble.


PALATE

A remarkably full-bodied, elegant interpretation of creamy fruit (limoncello, crushed almonds and light tobacco). It is the perfect sensation of an accomplished pleasure index offering a mid-palate that stretches towards a deep, masterful distinction (stone fruits, cherry, blueberry, apricot and fresh figs).


AROMA

Its aromatic freedom with infused floral sensations (lime blossom and verbena) is woven around the refinement of crisp, fresh fruit (mandarin and greengage). It will awaken the senses to refined notes, ranging from pulpy fruit to juicy citrus. Its highly delicate blend conveys the character of Pinot Noir, which subtly reveals itself through its terroir-based DNA.


TASTING

This fifth wine of the family rediscovers the natural expression of a pure Pinot Noir on exceptional terroirs. Served at cellar temperature (10/12° C), it can be paired with culinary dishes such as hay-cooked poultry or minced beef with fresh coriander and spring onions.

In Perfect Harmony with Vincent Cochard

 illecart-Salmon has been a particular favourite of mine ever since I worked as a sommelier at L’Arpège. I have especially pleasant recollections of Rendez-vous No. 3. As a devotee of Le Meunier, I was really impressed by how delicious it was.
In this edition of No. 5, the Pinot Noir is surprisingly fresh and well-balanced, with a lovely saline finish. I would pair it with a nice veal chop, sautéed in hazelnut butter and accompanied by saffron potatoes. Going a step further, I'd serve this champagne with chanterelle mushrooms, a carpaccio of brown button mushrooms, or a poultry and merguez jus with a hint of spice. To appreciate this 100% Pinot Noir to the full, nothing beats sitting down at the counter in Fleur de Pavé across from the chef! 




Grape Varieties & Blend


• 100% Pinot Noir, harvest year 2015 from the Montagne de Reims villages of Verzenay, Ambonnay, Aÿ and Verzy. The vineyards of the Montagne de Reims are ideally facing south on chalk subsoils buried deep underground.
