A sublime grape variety and terroir
Billecart-Salmon takes you to the historic village of Mesnil-sur-Oger on the Côte des Blancs. Here you will discover a new expression of Chardonnay, revealing a very special identity. The delicacy of its floral notes and the sweetness of its fruity aromas from this single varietal wine will brighten up your most beautiful shared moments.
APPEARANCE
Its luminous gold color offers a radiant, sparkling finish that gives way to a fine persistent bubble.
PALATE
A captivatingly tense tactile sensation is dominated by a chalky, seductive spirit (double cream, almond powder and tender nougat). A radiant complexity combined with a characteristic touch of salinity of the great terroirs of the Côte des Blancs. A delicate finish with hints of bergamot, iodine and white pepper.
AROMA
Its sensory development leans on distinguished aromatic floral notes, which speaks to its great minerality
of fruits (white roses, jasmin and the flesh of citrus fruit). Its sensual, meringue flavor is based on white pome fruit
(tart pear and clementine juice). It is the perfect expression of subtly disciplined Chardonnay, meticulously matured on the lees.
TASTING
This single-varietal & Grand Cru terroir offers an outstandingly delicious concentration of flavors. Served at cellar temperature (10/12° C), culinary pairings can include scallop carpaccio and sea urchins or even sea bream sashimi.

“ One of my most lasting memories of Maison Billecart-Salmon is all about the Rosés, the iconic Brut Rosé and the Cuvée Elisabeth Salmon 2006, which was particularly enticing in its depth and the complexity of its aromas. The Cuvée Rendez-vous No 6, a 100% Chardonnay, stands out for its remarkable minerality and its very lovely floral nose with refreshing citrus notes in the mouth. To pair with this wine, I would suggest a recipe from the Park Hyatt: a dish of caviar with an avocado and guacamole roll with lemon caviar, spring onion, cucumber jelly, green sauce and chopped pistachios. The marriage between the salinity of the caviar and the creaminess of the avocado lifts this blanc de blancs to heights that can only be described as sublime. To appreciate this champagne to the full, I would recommend enjoying it in the conservatory at the Café Jeanne in the Park Hyatt or on the terrace, preferably towards the end of the day in an intimate and romantic atmosphere. ”
